Paella has always been more than just dinner in my family — it’s the dish that brings everyone to the table, the one we argue over who gets the last scoop of, and the recipe my abuela guarded like a family heirloom. I’m so excited to share my version with the neighborhood. I start with premium bomba rice, gently toasted until it smells nutty, then slowly simmer it in a rich homemade seafood broth laced with real saffron threads, smoked paprika, garlic, and sweet tomatoes. Into the pan goes a generous mix of the freshest seafood I can get my hands on: plump, sweet shrimp, briny mussels and clams that open right in the pan, and tender calamari rings. Bright green peas and a handful of parsley bring color and freshness, but the real magic is the socarrat — that golden, crispy, caramelized crust of rice that forms at the bottom of the pan. It’s the part everyone fights over, and I take my time getting it just right. Each plate arrives with lemon wedges and a little cup of my homemade garlic alioli for dipping. It’s hearty, fragrant, and tastes like sunshine on the Mediterranean coast, but made with love right here in our neighborhood kitchen using ingredients from local markets whenever possible.
