Paper-thin ribeye griddled hot and fast, piled onto a soft Amoroso’s roll with sautéed onions and peppers, then finished the real South Philly way — a drizzle of warm Cheez Whiz, a slice of provolone, and a slice of white American, because one cheese was never going to cut it. I picked up a splash of Worcestershire in the onions after one too many trips to Philly convinced me it needed a little something extra. This is as close as you’re getting to a Passyunk Avenue cheesesteak without the road trip.
