🌶️🍜 Birria Ramen Bowl

Slow-braised beef birria, shredded tender and swimming in a deep red, chile-kissed consommé, poured over ramen noodles instead of the usual rice. Topped with melted Oaxaca cheese, fresh cilantro, diced onion, and a lime wedge on the side for that first bright squeeze. I started making this as a way to use up leftover birria and it turned into the thing people request most — the noodles soak up all that broth in a way rice never quite does.
